Whole30 Day 2 (Part II)

W

I have a doozy of a Monday, and a Tuesday for that matter.

I still work part time as an RN. For years and years I worked PR as a Pediatric Emergency / Trauma nurse and left that life about 2 years ago. Then I stopped talking about being a nurse. Many people ask me if I still am. The work I was doing was very sensitive, very important to me yet very sensitive. There are a few parts of my life that are just not suitable for social media. Not because I am hiding or running away from something, just because they aren’t suitable for social media.

Today I begin a new position with a new company that is part time, but the first two days of company orientation are 8-5. I am at the gym by 5a and both evenings I am teaching at 6:30. So it’s a long two days. Most important my Mom time these next two days consists of texting with Luc and that hurts me a lot. Thank goodness we have texting.

But that is what happens in life. To me it’d be worse if I didn’t see him because I was out on my bike all day.

I am a nurse because I love being a nurse, and it’s important to me to give back. Being a nurse, even in these new roles I have had is my way of keeping my leg in reality. I will be doing information sensitive work again….. in an investigative capacity. It’s four hours a day and I have the ability to set my own hours. I balance part time work as a nurse and being a coach. For me it’s a great balance.

Here is day two of Whole30 round II. Lunch was AMAZING. Spaghetti squash fritters from Well Fed 2. I also began training with Coach Ryan, and it was just a regular training day. Dinner was at Brick Oven… the guys had pizza. I am getting good at ordering out.

whole 30 day 2

My challenge today is bringing enough food. I imagine there will be coffee and baked goods all day, which I am fine staying away from, as long as I bring enough. I have a ton packed and ready to go. Preparation is key.

How are you doing? What do you find difficult? What recipes have you come across?
